Caribbean Mango Muffin

Mangoes can turn me on anytime. Be it ripe mangoes or mango smoothie, mango yogurt, Mango mousse or anything...if it has mango in it I just love it. So this was the second recipe I am gonna post on Mango. We all love cupcakes and muffins. This is a delicious cupcake that you can easily make at home in almost no time and after that everybody will crave for more.



Ingredients-


  • 1 ripe Mango, peeled and cut in small cubes
  • 1 cup all purpose Flour
  • 3/4th cup powdered sugar
  • 3/4th cup coconut milk
  • 1 large Egg
  • 1 tsp Vanilla extract
  • 1 tsp baking powder

Method-

  • Mix the all purpose flour and baking powder in a large bowl. Keep it aside.
  • Whisk and beat the egg into the powdered sugar till you get foamy mixture. Pour the vanilla extract in it and mix well.
  • Fold the wet mixture into the dry mixture of baking powder and powder. Mix it well so that no lump can be created.
  • Mix the coconut milk in it and mix well.
  • Mix the mango cubes in the mixture.
  • Preheat the microwave oven in 190 degree C in convection mode.
  • Set the 4-5 paper molds inside 4-5 muffin tins and pour the mixture in them
  • Bake it for 25-35 minutes (can vary depending on the microwave oven)
  • Put a skewer in one of the muffin. If it comes out clean your muffins are ready.
  • Serve hot.
Note- If you are keeping the muffin for a day  or two never forget to heat them up in the microwave oven for 20-30 seconds before eating.
