Mashed potatoes with egg poach topping

I love eggs.  When hungry and you want something tasty fast, eggs could be the best solution for sure.  So,  after waking up late this morning I was feeling too lethargic to make some tricky and time taking brunch.  Suddenly I thought of making this.  Easy and yummy.  All you need is potatoes and eggs to make this.

Prep time - 10 mins
Cooking time -  25 mins



Ingredients -


  • 3-4 large potatoes,  boiled and peeled
  • 1 large egg
  • 1/2 tsp Oregano 
  • 1/2 tsp Basil
  • 2 tsp Butter 
  • 1 small Cheese cube
  • Salt per taste

Method

  • Mash the boiled potatoes.  Mix it with basil, oregano, salt and butter. 
  • Melt the cheese little and mix it well with the mashed potatoes. 
  • Preheat the microwave oven convection in 180 degree. 
  • Bake the mashed potatoes for 20 minutes. 
  • Using a spoon make a small hole in the middle of the potato mix. 
  • Crack an egg and pour into that hole. The yolk must be placed in the hole. 
  • Put in microwave normal mode for 2-3 minutes. 
  • Serve hot.
