Chocolate Banoffee Cake with dark chocolate Ganache

Who doesn't love chocolate cake...It's a sin to not to love chocolate...and when you gate the moist and fluffy chocolate cake, you just want to have a bit of that sinful piece...This time I thought making the delicious Banoffee cake... This is the great way to rejuvenate the ripe bananas...even those who do not like bananas, can eat this cake and they won't even feel that they are having it... Banoffee cake is a magical recipe... And when I poured the ganache over it, the look made me happy....it is easy and of course delicious....

Ingredients-

For the cake-

  • 100 gms flour
  • 200 gms castor sugar
  • 2 ripe bananas
  • 4-5 tsp cocoa powder
  • 1 tsp coffee powder
  • 1 tsp baking powder
  • 2 eggs
  • 1/2 tsp salt
  • 2 tsp melted dark chocolate
  • 1 cup milk
  • 1 tsp vanilla extract
  • 50 ml white oil
For Ganache-
  • 300 gms block of dark chocolate
  • 2 tsp chocolate syrup
  • 50 gms butter
  • Castor sugar as required
  • 1-2 tbsp milk (if required)
Method (for the cake)-
  • Preheat the oven in 180C/ 350F
  • In a large bowl mix the flour, baking powder, coffee powder, cocoa powder and salt. Mix well.
  • In another bowl mix the eggs, 150 gms castor sugar, vanilla extract and white oil.
  • With a hand whisker or electric beater mix it well for 3-4 minutes till it becomes frothy.
  • Fold the frothy mixture into the flour mix. Stir continuously.
  • Keep stirring till you get thick and ribbony mix.
  • If it is too thick then mix little bit of milk in it and stir.
  • Blend the bananas in a blender.
  • Pour the banana mix in the mixture. Stir and mix well.
  • Grease the cake mold.
  • Pour the mixture in it. Put it in the microwave oven in convection mode for 45-50 minutes.
  • Put a skewer in the middle of the cake after 45-50 minutes. if it comes out clean your cake is done. otherwise, keep it inside for a few more minutes.
  • Let the cake cool down.
Method (for the Ganache)-
  • Put the dark chocolate, remaining castor sugar and butter in a microwave safe bowl.
  • Keep it in the microwave for 1 minute with the microwave in full power. NOT MORE THAN 1 MINUTE if you don't want the chocolate to burn.
  • If the mixture is too thick then blend it a bit, mix some milk and put it in the mixture for another 30 seconds. 
  • Blend it well and make sure there is no lump in it.
  • Let it cool for an hour. You can keep it in the fridge for half an hour.
Decorate the cake-
  • Check the Ganache. If it is too thick then mix little bit of milk with it and blend well.
  • Check if your cake is in room temperature or not.
  • If the cake is in room temperature, pour the ganache over it.
  • Arrange the ganache with the back of a spoon or knife.
  • Cover the cake with an even layer of Ganache.
  • cut some white chocolate bar in various shape.
  • Decorate the ganache with the pieces.
  • Put the cake in fridge for half an hour and let the ganache set well.
  • You will get the beautiful banoffee cake done.
**P.S- If you love banana, then you can decorate the cake with pieces of Banana and other fruits.
