Carrot Pudding

Gajar ka Halwa has always been a popular dessert. However, I lack the sweet tooth hence never really enjoyed it. This time I thought of making it in a bit easier way. Grating the carrot is quite a time consuming job. So I put the carrots in the grinder and made a thick carrot paste instead. It was quick and the end result was satisfying for sure. With the increasing heat I am posting little less. However, I am planning to throw away all my lethargy and bounce back on blogosphere with a bang.

Here is the recipe of Carrot Pudding.

Ingredients-

  • 3-4 medium size carrots
  • 1 cup milk
  • 1/2 cup condensed milk
  • 1/4 cup cream
  • 3/4 cup sugar
  • 2 teaspoons dry fruits
  • 2 teaspoons Ghee
  • few pieces of cardamom

Method-

  • Peel the carrots and make a thick paste of them in a grinder. Keep it aside.
  • In a deep pan, heat the ghee
  • Heat the cardamoms in them for a few seconds.
  • Add the carrot paste and stir well for 8-10 minutes in low flame.
  • add the milk and stir well.
  • add the sugar and mix well. Stir for another 3-4 minutes.
  • add the condensed milk and cream.
  • Stir till the mushiness is gone and the pudding becomes thick and sticky.
  • mix the dryfruits.
  • Refrigerate for an hour before serving.
  • Serve cold or in normal temperature.
