Upside down caramelized pineapple cake

I never bought Pineapple because I never knew how to cut it with knife. Couple of weeks back I suddenly came across the upside down pineapple cake picture and I loved it. Instantly I got bitten by the old "I can do it too" bug. Thanks to my better half who loves desserts and cakes I got myself landed into the place where I had to cut this Pineapple with a knife. After talking to my always encouraging friend and a few videos online I started making this Upside down caramelized Pineapple cake. It was actually easy.

Ingredients for Caramel-


  • Sugar 50 gm
  • 1/2 cup Brown sugar 
  • 1/2 cup butter
  • 1-2 Tbsp Pineapple juice

Method-

  • add the butter in a hot pan.
  • add the sugar and brown sugar in it. Keep stirring. Otherwise it will stick to the bottom.
  • Once it starts to bubbling add the pine apple juice. Keep stirring for another 3-4 minutes.
  • Your caramel is ready.

Ingredients for cake-

  • 1 medium size ripe pineapple
  • 1 cup plain flour
  • 1 cup castor sugar
  • 1cup pineapple juice
  • 2tsp baking powder
  • 2 eggs
  • 1tsp vanilla extract
  • pinch of salt

Method-

  • cut most of the pineapple in various shapes of your choice. Keep it aside.
  • chop the remaining pineapple and keep it in another bowl.
  • mix the caster sugar with the eggs.
  • Mix the vanilla extract.
  • Keep whisking with electric whisker or hand mixer till it becomes smooth.
  • In another bowl mix the flour, baking powder and salt. Keep mixing with a hand mixer.
  • Pour the egg and sugar mix into the flour mix and keep whisking non stop with the hand mixer. This mixture needs to be airy. Do not use electric whisker here.
  • Put the chopped pineapples in it. Keep mixing.
  • Your cake mix is ready.
  • Now take a deep cake pan and grease it well with butter/vegetable oil
    .
  • Pour the caramel in it.
  • place the pieces of pineapples into the bottom of the pan in the caramel. Cover the bottom fully with pineapple pieces.
  • pour the cake mix over it.
  • set the microwave oven in convection. Pre-heat in 180 degree.
  • Place the cake tin in the microwave for 30-40 minutes.
  • Keep it out and enter a skewer in it. If it comes out clean your cake is ready.
  • Enjoy.
