Well, Are you shocked to see veg recipe here? Let me tell you then, I love vegetables and fruit. However I agree that it is difficult to cook veggies than meat items and having an absolute non veg lover as partner is another reason that I do not cook veggies that often.
I have always been hugely inspired by the invention round of Masterchef where you can experiment with the recipe while keeping the core theme intact. I often do that with my recipes even though many people try to stick to the "copybook" recipes, such experiments are the joy behind my cooking and with Frittata I did the same. I changed a few things and the outcome was more than just delicious.
Ingredients-
- 4 slices of Brown Bread cut into small pieces
- 200 gms Cream cheese (you can use Mascarpone cheese for better texture)
- Little bit of Mozarella Cheese
- 1 small cheese cube
- 2 Medium size Carrots chopped
- 1 Medium size Aubergine cut into small pieces
- 2 Medium size Onions/ Shallots chopped
- 2-3 spring onions chopped
- 1/2 tsp grated ginger
- 2 eggs
- Salt
- Sugar
- Oil
Method-
- Heat some oil in the oak. Fry the aubergine, carrots, spring onions and Shallots in it. Mix the bread in it. Add sugar and salt, mix well till you get a mushy mixture. It will be little on the sweet side but not much. Keep it aside.
- In the mixer grinder mix the cream cheese/ Mascarpone cheese, 2 eggs and blend well.
- Mix the veggie mix, grated ginger, in the cheese mix and blend again.
- Pre-heat the microwave in convection mode in 200 degree C.
- Pour the mixture into foil pack. Grate the cheese cube on it.
- Bake it for 25-30 minutes.
- Serve hot.
P.S- i) This recipe is especially for the cheese lovers. You can cut down the mozarella if you do not like too much of cheese. However, the final texture won't be too much cheesy and you would like it.
ii) You can add smoked chicken in this recipe while blending the veggies and can make yumm smoked chicken frittata.
