Prawn has always been my comfort zone however pumpkin is not. I love eating prawns and also I love cooking it. But when it comes to pumpkin, well I'm not much of a fan of it. Watching various western cooking shows and reading many recipes somehow induced this urge to me to cook prawn with pumpkin. Sometimes we long for a nice entree but then we get disappointed. Hence, I decided make a different type of entree that would both looks and tastes great. The name is pretty long I know and I apologize for that wholeheartedly. I couldn't find any other name of it, hence I have used the name of every components used in the dish in the name. Forget the name, once you taste it, you will only remember the delicious taste of it.
Ingredients for Pumpkin Puree-
- 300 gm Pumpkin peeled and cut into cubes
- 1/2 cup fresh cream
- Olive oil
- Seasoning (I used basil, oregano, salt, pepper)
Ingredients for Gremolata-
- 1 Tbsp Parsley leaves, minced (use coriander if Parsley is not available)
- 2-3 cloves of garlic, minced
- 1 tsp lemon zest
- 1/2 tsp lemon juice
- salt
- pepper
Ingredients for Buttered Prawns-
- 5 Prawns
- Butter
Ingredients for Dumpling-
Method-
- Start with the Gremolata ingredients. Mix all of them and grind them into a paste. Keep aside.
- Now make the dumplings. You can get the process here. Just skip the chicken and use the mentioned ingredients.
- To make the pumpkin puree season the pumpkin with olive oil, oregano, basil and pepper and roast it in 200 Degree C for 20 minutes or till become soft.
- Put the roasted pumpkin mixture into the grinder and season well. Grind it for some time. Mix the cream and grind it till you get the desired smooth texture. Keep it aside.
- Heat some butter in the wok. Pan sear the prawns around 30-40 seconds each side. Keep it aside with the leftover butter.
- Now start plating up. First take a deep bowl or pasta bowl to make it look better. Pour 2-3 tbsp pumpkin puree in it.Now pour a few drops of olive oil on it.
- Place the Prawns and dumplings. Top them with the Gremolata mixture.
- Decorate the way you want to.
- Sprinkle little bit of pepper on the whole dish.
- Serve hot.
