Coconut Chicken Curry

Sundays are bad. You feel depressed because of the Monday. You wake up late on Sundays and then realize the day has just become even shorter. On one such Sunday that too after a late night on the Saturday when I felt like doing nothing with a little hangover making a simple chicken curry for lunch was all I could think of. I was feeling lethargic and depressed  both so I wasn't ready to put in much effort into it. Had some coconut powder at home and I decided to go with it. They say in Kerala they make coconut chicken. I did not know the recipe and didn't check for any recipes either. Mixing the coconut milk with poppy seed paste and the result was magical. Sharing the easy and yummy recipe with you all.


Ingredients-
  • 350 gms Chicken
  • 1 cup coconut milk
  • 1 Tbsp Poppy seeds paste
  • 2-3 Green Chili slitted
  • 1/2 tsp mustard seeds
  • Salt per taste
  • Sugar per taste (you can also use honey)
  • 1 Tbsp Fresh cream (Optional) 
  • 2 Tbsp Butter

Method-
  • Wash the chicken and marinate with salt butter. Keep it aside for 1/2 an hour.
  • In an oak heat the remaining butter.
  • Put the mustard seeds and green chilies in it. 
  • Once they splatter put the poppy seed paste in it and fry till the oil gets separated.
  • Put the marinated chicken in it and mix well for 2-3 minutes.
  • Mix the coconut milk with it. Put salt and sugar. Cover and cook for 10-15 minutes.
  • Once it comes to boil and the chicken becomes tender, whip the fresh cream(if you are using) and pour on to the gravy. Put the gas off and the lid on for 5-6 minutes.
  • Serve hot with plain rice or Pulao.
