Ingredients-
- 3-4 medium aubergines, cut into round shape.
- 2 medium capsicum, cut into 1 inch pieces
- 1 large tomato chopped.
- 2 large eggs
- 1 medium cup coconut milk
- 1 tsp Fennel seed
- 1/2 tsp turmeric powder
- salt and sugar per taste
Method-
- Make a large and thin omelette. Cut it into small pieces. Keep it aside.
- Fry the aubergines. Keep it aside.
- Heat oil again and pour the fennel seeds in it.
- Add the capsicum in it and fry well.
- Add the tomatoes and stir well till it becomes mushy.
- Add the turmeric powder and mix well.
- Pour the coconut milk, salt and sugar. Bring it to boil.
- Now pour the aubergines and mix well. If you think the gravy has become too mushy then you can add little bit of milk in it.
- Lastly, add the pieces of omelette and put the lid on for 2-3 minutes.
- Serve hot with rice or chapatis.
Note- I used bit extra sugar as I prefer extra sweetness in any coconut sauce based dish.
