When Ontbijtkoek Hit my Kitchen #daring_bakers #dutch_sweet_bread

After the first challenge I was eagerly waiting for my second challenge with much anticipation. 


For the month of December, Andrea from 4pure took us on a trip to the Netherlands. She challenged us to take our taste buds on a joyride through the land of sugar and spice by baking three different types of Dutch sweet bread.


When I read Ontbijtkoek I could not really understand what it was actually. Later only when I saw the recipe I found my pulse normal again. 

One of the cakes were Paperkoek which is one type of sweetbread that is made with warm and flavorful spices. For that you need to prepare the Gingerbread spices. Here is the recipe of the Gingerbread spices that is the main ingredient.



Gingerbread Spice Blend

  • 6 tablespoons cinnamon
  • 2 teaspoons nutmeg
  • 1 teaspoon cloves
  • 1 teaspoon cardamom
  • 1 teaspoon ground white pepper
  • 1 teaspoon ground coriander
  • 1 teaspoon ground ginger
  • 1 teaspoon ground anise
  • 1 teaspoon ground mace
Once your Gingerbread spice is ready you need to prepare the Paperkoek Cake. It is flavorful and absolutely perfect for breakfast. You can have it with a cup of tea or coffee or you can just have it like that. It will fill your mouth with dash of flavors.

Paperkoek Cake-

Ingredient-


  • 1 large egg
  • 2 tbsp sugar syrup
  • 1/2 cup lukewarm water
  • 1 tbsp ground gingerbread spices
  • 250 gm brown sugar
  • 2 cups flour
  • 1 tsp baking powder



Method-
  • In convection mode, preheat your microwave oven in 180 degree C.
  • Put water, egg, syrup, brown sugar and the spices in a bowl and whisk till everything is mixed and dissolved well.
  • Add the baking powder and flour in it and keep whisking using a wooden spatula.
  • Grease the cake tin and bake it for 60-70 mins (mine took 64 minutes) or till a skewer comes out clean once you put it in the middle.
  • Serve hot.
