Chinese Egg Curry

With the scorching heat sometimes I just  feel lethargic. And after a lot of dilemma yesterday when I decided to finally cook something for dinner my tastebuds were still in denial. They wanted something simple and so I opted for Chinese egg curry instead of Indian egg curry. It is extremely simple and very easy to cook. Doesn't matter whether you are a great cook or just a college student or IT engineer staying away from home. At the end of the day all you need is half an hour to cook this simple and tasty Chinese egg curry.

Ingredients-

  • 5 boiled eggs
  • 2-3 medium size Onion chopped
  • 2 large green capsicum chopped
  • 1 Tbsp Soy sauce
  • 2 Tsp Sweet chilly sauce
  • 1 Tsp Tamarind oak sauce
  • 1 Tsp Tabasco pepper sauce
  • Salt and sugar according to taste

Method-

  • Fry the eggs in oil and then cut them in two pieces. Keep it aside.
  • Heat some more white oil in the pan.
  • Add the half of the chopped onions in it. Fry till it becomes golden.
  • Mix all the sauces in a bowl. Pour the mixture on fried capsicum and onion. Stir and mix well.
  • Cover the lid and cook for 2-3 minutes. 
  • Mix the salt and sugar.
  • Mix the eggs.
  • Mix the rest of the onions.
  • Cover and cook for 2-3 minutes.
  • Chinese egg curry ready.
  • Serve it with noodles, roti or rice.
