Gur-Badam Phirni ( Ground rice pudding with nuts and jaggery)

Phirni is a popular Mughlai Dessert served in a bowl that is made of Clay. The dessert lovers simply drool on Phirni and I have one such dessert lover in my home. So, I finally thought of celebrating the Bengali New Year a couple of days in advance and made some Bengali delicacies. There, I kept Phirni as the dessert and I love how it was licked till the last drop. It was really satisfying after all the hardwork. And it was actually pretty easy to make.



Ingredients-


  • 150 gms basmati rice
  • 500 ml Milk
  • 200 ml condensed milk
  • 3-4 tsp sugar
  • 1 cup crushed Jaggery
  • 50 gm nuts and cashew
  • 2 tsp butter
  • Few pieces of cherry for decoration

Method-

  • Wash the rice and let it dry.
  • When the rice is dried properly, ground it in the mixer.
  • take a non stick pan and heat the butter.
  • Put the crushed jaggery in it.
  • Stir for 4-5 minutes till they melt.
  • Mix the cashew and nuts in it. Keep stirring.
  • Stir well till the the sugar, jaggery and nuts are mixed well.
  • Keep it aside.
  • Take another non stick pan and heat the milk.
  • When it comes to boil mix the condensed milk in it.
  • Keep stirring non stop. Otherwise lump will be formed.
  • Mix the ground rice in the mixer and keep stirring.
  • After stirring the mixer for 10-12 minutes non stop mix the liquid sugar and jaggery mixer in it.
  • Stir it for another 10-15 minutes.
  • When it get the desired texture and thickness, put the flame off.
  • Pour it in a nice bowl and freeze it for 2-3 hours.
  • Before serving decorate with with the cherry pieces.
  • Serve chilled.
