Chocolate peanut cinnamon cake

I was elated after getting approved at the "Daring Kitchen" as "Daring baker" profile. Before starting my 1st challenge there  I surfed through some of the previous challenges when my friend gave me this link http://www.passionateaboutbaking.com/2012/05/baking-armenian-nutmeg-walnut-cake-the-perfect-one.html . This was the recipe of Armenian Nutmeg-walnut cake. While checking this one suddenly an idea popped into my mind. That is when I decided to make the delicious, flavorful and super yummy Chocolate peanut cinnamon cake. it is warm and extremely flavorful and you will definitely get the demands from your friends and family for making it "once more" and more and more and more...

Ingredients-

  • 1 cup milk
  • 1 cup flour
  • 1 tsp baking powder
  • 1 tsp cocoa powder
  • 100 gm peanuts
  • 2-3 cinnamon sticks
  • 1 egg
  • few chunks of semi-sweet chocolate
  • 75 gm butter
  • 2 cups brown sugar

Method-
  • in a blender mix the cinnamon sticks, 1 cup brown sugar and peanuts. Blend it till you get a little coarse mixture (around 30-40 seconds). Keep it aside.
  • Melt the semi sweet chocolate chunks. Put it is a microwave safe bowl. In 60% power heat it for 2-3 minutes. Do not let it burn.
  • In a medium size bowl mix the flour, cocoa powder, baking powder, remaining brown sugar, melted chocolate, butter, milk and egg. Mix till get get a homogeneous mixture. The texture will be little bit like ribbony and not too much thick.
  • Pre-heat the microwave oven in convection mode in 180 degree C.
  • Grease a 6" cake tin. Now layer it with the coarse peanut, cinnamon, sugar mixture.
  • Pour the cake mix on it.
  • Top it again with the remaining coarse peanut, cinnamon, sugar mixture.
  • Bake it for 45-60 minutes, depending on your oven. Mine took 50 minutes.
  • Put a skewer in the middle, if it comes out clean then your cake is done.
  • Have it with coffee, tea or just like that. Enjoy the flavors.
