Egg Vegedict

Increasing heat in Delhi and the increasing back pain I thought of making nothing initially. But when I checked there were too many vegetable in the fridge. So finally, after taking some rest I thought of making something with the vegetable. Now, confusion again. What to cook. Thought of experimenting a bit today. Took the aubergines and capsicum along with tomato and onions. Then though of adding the punch of coconut and egg in it. The end result was absolutely delicious. The picture won't do justice to the taste as I wasn't sure about the taste while making it. hence, I did not click the picture carefully. Bad decision :(

Ingredients-


  • 3-4 medium aubergines, cut into round shape.
  • 2 medium capsicum, cut into 1 inch pieces
  • 1 large tomato chopped.
  • 2 large eggs
  • 1 medium cup coconut milk
  • 1 tsp Fennel seed
  • 1/2 tsp turmeric powder
  • salt and sugar per taste
Method-



  • Make a large and thin omelette. Cut it into small pieces. Keep it aside.
  • Fry the aubergines. Keep it aside.
  • Heat oil again and pour the fennel seeds in it.
  • Add the capsicum in it and fry well.
  • Add the tomatoes and stir well till it becomes mushy.
  • Add the turmeric powder and mix well.
  • Pour the coconut milk, salt and sugar. Bring it to boil.
  • Now pour the aubergines and mix well. If you think the gravy has become too mushy then you can add little bit of milk in it.
  • Lastly, add the pieces of omelette and put the lid on for 2-3 minutes.
  • Serve hot with rice or chapatis.
Note- I used bit extra sugar as I prefer extra sweetness in any coconut sauce based dish.
